Yacón

Smallanthus sonchifolius

Yacón, also known as the ground apple, is a tuber producing relative of sunflowers. It has a similar above ground growth with small yellow flowers, but also produces yam-like tubers with a crispness similar to jicama, containing a delicate and juicy sweetness.

The tubers can be eaten fresh, juiced, or cooked into a stir-fry. Yacon is perfect for people diabetics with a sweet tooth since yacon contains a type of sugar, fructooligosaccharide, that does not trigger the glycemic index in the body. It is low in calories, and is also prebiotic (helps beneficial gut bacteria to grow).  Yacon is high in vitamins and antioxidants and is considered one of the world’s superfoods.

Easy to grow, plant it in the spring for a fall harvest or year-round in the tropics.
